Country Chili In A Pumpkin


  • 1 pound ground beef or venison
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1/2 teaspoon salt
  • 14 ounces diced tomatoes, undrained
  • 15 ounces tomato sauce
  • 4 cups cooked beans
  • 1 quart broth/stock or liquid from beans
  • Large pumpkin
  • Sour Cream
  • Shredded Cheese
  • Diced onion


  1. In a large pot on the stove or saute function on Instant Pot, brown ground beef and chopped onion (if using).
  2. Add cumin, chili powder, salt, garlic powder and onion powder (if using).
  3. Add tomatoes, tomato sauce, beans, and liquid. Cook on low until warm but it is better the longer it cooks.
  4. While chili is cooking, cut a circle out of the top of your pumpkin of choice and pull it out in one piece. This will be your lid.
  5. Scrape out seeds.
  6. Add chili to inside of pumpkin and put lid back on.
  7. Bake at 400 degrees for about an hour or until the pumpkin is soft and tender on the inside and the chili is hot.
  8. Scrape some of the flesh off and into the chili.
  9. Serve and top with shredded cheese, sour cream and diced onion.
